Easter “Bunny Paw” Pancakes

Age Recommendation - suitable from 6+ months of age.

Allergens

This recipe contains wheat, egg and milk but can be easily substituted.

  • You can swap egg for flax eggs
  • You can swap milk for oat milk, breastmilk or water
  • Use coconut flour instead of wheat flour

Easter "Bunny Paw" Pancakes

Ingredients

For the pancakes

  • 1 very ripe banana
  • 2 eggs whisked
  • 1/2 cup of flour
  • 2 tablespoons of milk

For the Paw Print Jam

  • 1 cup of strawberries or raspberries (frozen is fine)
  • 2 tsp chia seeds

What to do:

  • First thing is to make the chia jam. Mash your berries in a microwave safe dish and add in your chia seeds.
  • Microwave for 2-3 minutes until bubbling. Stir and allow to cool. It should be a jammy texture. If it is too wet microwave for longer.
  • Now onto the pancakes. Mix everything for your batter together and heat a pan on the stove.
  • This is the fun/artistic part! Using a soup spoon place a large dollop of batter in the pan. Allow to cook for 1-2 minutes. This is the middle of the paw. We now want to add the toes.  Using a teaspoon place 3 smaller dollops of batter above the paw.
  •  Cook for another minute or so and then flip.
  • Take off and allow to cool a little before adding your jam.
  • To finish off your "Bunny Paw" spoon a small amount of the chia jam into the middle of each toe and the centre of the paw before serving.
