Cottage Cheese Banana Bites

Ingredients

  • 1 Cup Quick Oats
  • 1 Banana
  • 1 Cup Cottage Cheese
  • 2 Eggs
  • 1 Teaspoon Cinnamon
  • 1/4 cup Maple Syrup or Sugar (This is optional and can be left out for babes under 2)

Method

  1. Preheat oven to 190°C if you're wanting to bake these. Alternatively they can be pan fried as pancakes.
  2. Blend your ingredients together in a blender or food processor. Process until smooth.
  3. Pour mixture into greased dainty dozen baking tray or mini muffin tray. Place in preheated oven and bake for 15-18 minutes. Alternatively you can pour bite sized pieces into a pan over low-medium heat and fry for 1-2 minutes per side.
  4. Remove from the oven and allow to cool. If using our dainty dozen trays simply pop them out and serve them up!

Serving Suggestions

These are actually perfect just on their own as they are a great combo of fats, carbohydrates and proteins! To add a little extra flavour they could be served topped with butter or nut butters.
