One Tray Bake Beef and Prune Koftas with Roast Pumpkin and Cous Cous

Written by: Jeanette Blandford | Published on May 28, 2025
A fuss-free, family-style one tray bake with soft beef and prune koftas, roast veggies and couscous. Iron-rich, finger-food friendly and brilliant for stocking the freezer.

Another family-friendly one tray bake that's packed full of nutrition for the whole family.

The koftas make a great finger food for little ones starting solids, as do the chunky vegetables. The couscous is a little trickier on its own, but once you mix it with some of the avocado dressing it will easily stick to a spoon.
