Sweet Potato and Sardine Fritters
Soft, nutrient-dense sweet potato and sardine fritters — packed with omega-3, calcium and iron, and a brilliant addition to your freezer stash.
These little fritters are the perfect addition to mealtimes (and a great one to add to the freezer stash!). In this recipe we combine two nutrient-dense foods — sweet potato and sardines.
The sweet potato offers fibre, carbohydrates for energy, and vitamins and minerals like beta-carotene. Beta-carotene is what gives it that orange colour, and it becomes vitamin A to help with bub's immune system and eyesight too.
Sardines are a low-mercury option filled with important fats like omega-3, as well as protein, B12, vitamin E and D. Sardines are also high in calcium, as they have soft little calcium-filled bones that are perfectly safe for babies.
