Carrot & Potato Cakes

Ingredients

  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup plain flour
  • 1 tsp garlic powder
  • 2 carrots, finely grated
  • 2 potatoes, finely grated
  • Olive oil, for cooking

Baby-friendly dip ideas (optional):

  • Full-fat cottage cheese
  • Smooth ricotta
  • Plain full-fat Greek yoghurt
  • Smashed avocado
  • Plain hummus
  • Plain cream cheese

Directions

  1. In a bowl, whisk together the 2 eggs, milk, plain flour and garlic powder until smooth.
  2. Finely grate the 2 carrots and 2 potatoes. For crispier cakes, squeeze out any excess liquid first. Add to the batter and mix to coat.
  3. Heat a large frying pan over low heat and drizzle with olive oil.
  4. Place spoonfuls of the mixture into the pan, pressing down to make a patty shape.
  5. Cook for 4–5 minutes, then flip and cook for another 4–5 minutes, until golden and the potato is well cooked through.
  6. Remove from the pan and place on a paper-towel-lined plate to drain off any excess oil. Allow to cool before serving.

Storage Instructions

Store cooled cakes in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Reheat until piping hot, then cool before serving. They're also lovely cold in a lunchbox for older kids.
