We love a savoury muffin recipe! These polenta muffins are full of flavour and make a great addition to any meal that's a little runny — think chilli con carne, soup or a stew. They soak up the extra liquid and flavour, making it much easier for bub to eat.
This recipe is also really versatile. You can easily leave the spices out and add other veggies like roast pumpkin, grated zucchini, broccoli or a little goats' cheese.

- Portion into your muffin trays
- Cook for 45 minutes until cooked through and golden
- Allow to cool before serving

Nutrition Notes
Polenta and self-raising flour provide gentle carbohydrate and energy, the eggs add protein, and a whole box of spinach brings a good hit of iron, folate and fibre. The olive oil and cheese add healthy fats and a little calcium too.
Parent Tip
These muffins are brilliant served alongside any runnier meal — think chilli con carne, soup or a stew — as they soak up the extra liquid and make it easier for bub to self-feed.
