Super Easy Peanut Butter Baby Bars
Ingredients
- 1.5 cup of quick oats
- ½ cup of desiccated or shredded coconut
- ½ cup of puree apple (can also use pumpkin, sweet potato or banana)
- ¼ cup of flour
- 3 tbs peanut butter
- 1 tsp vanilla
- ¼ tsp cinnamon
- ¼ tsp ground ginger (optional)
- 1/8 tsp baking powder
- 2 tbs chia seeds
- 6 tablespoons of water
Optional: You could also add diced prunes or chia jam through these before baking.
Directions
- Preheat your oven to 160 degrees Celsius and line a brownie tin with baking paper
- Pop everything but ½ a cup of the oats into the food processor and blend. If it is a little thick (we are aiming for a cookie dough type texture), then add in some more water. Mix in the last ½ cup of oats with a spoon; doing this gives it a little more texture than just blending it all together.
- Spread your mix into your tray and then press it down with the back of a spoon. Sprinkle with coconut and oats before baking for 20-30 minutes. Slice while still warm and then allow to cool.
Storage Instructions
Store the bars in an airtight container in the fridge for up to 4 days. They also freeze really well — freeze the sliced bars and pull one out as needed, defrosting in the fridge or at room temperature.
Nutrition Notes
These bars are wonderfully fibre-rich and energy dense thanks to the oats, chia and peanut butter, offering slow-release energy plus healthy fats and a little protein. The pureed fruit keeps them naturally sweet with no added sugar.
Parent Tip
These make a great on-the-go snack and a handy vehicle for dips, yoghurt or spreads. They're also a lovely way to keep offering peanut once it's been introduced — a smooth peanut butter blends in easily and safely.
Frequently Asked Questions
From what age are these suitable?
They're suitable from around 6 months as a soft, fibre-rich snack. Offer in finger-sized strips for younger babies learning to self-feed.
Are these a good way to include peanut?
Yes — using smooth peanut butter is a safe, gentle way to keep peanut in your little one's diet once it's been introduced. Whole or chopped nuts are a choking hazard, so always use a smooth nut butter.
Can I make them peanut free?
Absolutely — swap the peanut butter for another nut or seed butter such as almond or sunflower seed butter if peanut hasn't been introduced or needs to be avoided.
