Ingredients

For the Pancakes

• 1 very ripe banana
• 2 eggs, whisked
• ½ cup flour
• 2 tablespoons milk

For the Paw Print Jam

• 1 cup strawberries or raspberries (frozen works well)
• 2 teaspoons chia seeds

Method

  1. Start by making the chia jam. Place the berries in a microwave-safe bowl and mash well with a fork.

  2. Add the chia seeds and stir to combine.

  3. Microwave for 2–3 minutes until the mixture is bubbling.

  4. Stir and allow to cool. The mixture should thicken into a jam-like texture. If it is still too runny, microwave for another minute.

  5. To make the pancakes, mash the banana in a bowl.

  6. Add the whisked eggs, flour and milk and mix until a smooth batter forms.

  7. Heat a non-stick pan over medium heat.

  8. Using a soup spoon, add a large spoonful of batter to the pan. This will form the centre of the bunny paw.

  9. Cook for 1–2 minutes.

  10. Using a teaspoon, add three small dollops of batter above the centre pancake to create the “toes”.

  11. Cook for another minute, then carefully flip the pancakes and cook until golden.

  12. Remove from the pan and allow to cool slightly.

  13. To finish the bunny paw, spoon a small amount of chia jam into the centre of the paw and each of the three toes.

  14. Allow to cool to a safe temperature before serving.

Storage Instructions

Store pancakes in the fridge for up to 2 days.

Freeze pancakes for up to 2 months and reheat in a pan or toaster.

Chia jam can be stored in the fridge for up to 3 days.
