Christmas Spiced Sweet Potato and Banana Bread

Ingredients

  • 2 eggs
  • 1 cup of mashed sweet potato (we peeled, chopped and covered it in water in a microwave safe dish. We then cooked it until soft, drained and mashed it)
  • 2 cups of self raising flour (can use wholemeal)
  • 1 cup of dates (soaked in boiled water for 10 minutes then drained and mashed)
  • 1 ripe banana
  • 1/4 cup of olive oil
  • 1/2 cup of milk
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp all spice

Directions

  • Preheat your oven to 180 degrees
  • Mix your eggs, sweet potato, dates, banana, milk and oil in a bowl
  • Add in your spices and flour and stir until combined
  • Line a bread tin with baking paper and pour your batter in
  • Cook for 45 minutes or until a skewer comes out clean

Storage Instructions

Store the cooled loaf in an airtight container for up to 3 days, or slice and freeze for up to 3 months. Thaw slices at room temperature, perfect for festive snacks and lunchboxes.

Nutrition Notes

Naturally sweetened with sweet potato, banana and dates instead of added sugar, this festive loaf is a lovely choice for little ones. The eggs add protein, and the warm spices bring all the Christmas flavour without the sugar overload.

Parent Tip

For babies 6-9 months, serve a slice with a little yoghurt or fruit puree — cakes and loaves can be a bit claggy in little mouths, and extra moisture makes them easier to eat.
