BLW Green Pancakes (Broccoli & Spinach Baby Recipe)
Ingredients
• 1 head broccoli, chopped
• 1 cup baby spinach
• 2 eggs
• 2 tablespoons wholemeal self-raising flour
• ½ cup water
• Olive oil spray
Method
- Place a saucepan over medium heat and add the chopped broccoli, spinach and water.
- Cook until the vegetables are soft and wilted.
- Transfer the cooked vegetables to a blender.
- Add the eggs and flour and blend until smooth.
- Heat a large frying pan over low–medium heat and lightly spray with olive oil.
- Pour the mixture into the pan to form small pancakes.
- Cook for 1–2 minutes, then flip and cook the other side for another 1–2 minutes until cooked through.
- Allow to cool slightly before serving.
