Spanish Omelette (Potato Tortilla)
A simple Spanish potato tortilla that's soft, protein-packed and a lovely first egg food — suitable from 6 months and easy enough to share with the whole family.
This is a super simple and tasty Spanish classic that is suitable as soon as your little one starts solids.
You may have noticed there is a theme here — we like simple food that doesn't require making multiple meals for everyone in the household! This dish also takes us back to a simpler (kid free) time when you could travel to places like Spain for tapas and a glass of rioja. For such a tasty dish, you wouldn't have expected it to be so simple.
This is also a recipe that is very easy to add extra ingredients to. Roasted capsicum or sardines are an excellent addition to layer through the potato before you add in the egg.
